Lemon and coriander couscous salad

Recipe Ingredients
400g couscous;
grated zest and juice of 2 lemons;
4 tbsp chopped fresh coriander;
12 pitted black olives, chopped;
2 tbsp olive oil.
 
Recipe Method
Prepare the couscous as on the packet instructions.

Meanwhile, in a bowl whisk together the olive oil, lemon juice and zest. Mix this into the couscous and leave to cool.

Add the coriander and olives to the couscous and mix through. Season.

Chill in the fridge and fluff the couscous with a fork before serving.
