| 275g crunchy peanut butter 125g butter 260g plain flour 1/2 tsp baking powder 120g unsalted roasted peanuts 200g brown sugar 1 egg will make about 30 cookies |
| Recipe Method |
| Roughly chop the peanuts. In a bowl whisk the peanut butter and the butter until creamy. Add the sugar and continue to whisk until pale. Then add the egg and whisk until combined. Into this mixture, sift the flour and baking powder and add the peanuts. Mix through. Taking a tablespoon full of the mixture at a time roll into a ball (rubbing your hands in flour first will stop it sticking too much) and place on a lined baking tray. Flatten each ball until about 1cm thick. bake for 15 mins in a preheated oven (180c). Transfer to a wire rack to cool. |
