| 430g tinned pineapple rings in natural juice,
drained and cut into chunks; 1 large red pepper, diced; 1 red onion, chopped; 2 green chillies, finely chopped; 200g canned sweetcorn, drained; 3 tbsp lime juice; 1 tbsp sunflower oil; salt and pepper |
| Recipe Method |
| MIx together the oil, lime juice, chillies and
season with salt and pepper. Leave for 30 minutes. Put the pineapple, onion, red pepper and sweetcorn in a bowl and mix. Pour the dressing over the pineapple mixture and mix through. |
