| Recipe Ingredients |
| olive oil; 1 onion, chopped; 1 large potato, peeled and cubed; 125g spinach; 1 1/2 pints chicken stock; 1/2 pint milk (or soya milk which tastes just as good); 1 bay leaf; salt and pepper |
| Recipe Method |
| Heat some oil in a pan and gently cook the onion
until soft. Add the potato and spinach and cook for about 5 minutes
until the spinach has wilted. Add the stock, milk and bay leaf and bring to the boil. Cover and simmer for 15 minutes until the potato is tender. Remove bay leaf and transfer to a food processor, blitz until smooth. Return to pan and heat through. Season to taste. |
