| 8 large sweet potatoes; 100g butter; 250g mature cheddar cheese, grated; 1 red chilli, deseeded and finely chopped; 4 spring onions, finely chopped; salt and pepper. |
| Recipe Method |
| Preheat the oven 200c, gas 6. Place the sweet
potatoes on a baking tray and roast for 45 mins until softened.
Allow to cool for 10 minutes. Halve the potatoes lengthways, and scoop the flesh out into a bowl. Add the remaining ingredients to the flesh and mash together. Season with salt and pepper, and spoon the mixture back into the 8 skins. Reheat in the oven for about 25 minutes until hot. |
