Rainbow rice

Recipe Ingredients
100g basmati rice;
1 red pepper, deseeded and finely chopped;
1/2 cucumber, deseeded and finely chopped;
1 large carrot, peeled and grated;
6 dried apricots, chopped;
2 tbsp pumpkin seeds, toasted;
2 tbsp olive oil;
juice of 1/2 orange.
 
Recipe Method
Cook the rice according to pack instructions. Drain, rinse then drain again.

Put rice in a large bowl then mix in the red pepper, cucumber, carrot, apricots and pumpkin seeds. Drizzle over the olive oil and orange juice and gently mix through.
