Walnut, rocket and orange salad

Serves: 4

Recipe Ingredients
3 tbsp walnut oil;
50g walnut halves;
3 oranges;
80g watercress;
80g rocket;
2 tbsp balsamic vinegar;
1 tbsp orange juice.
 
Recipe Method
Heat the walnut oil in a frying pan and cook the walnuts for 2 minutes. Remove and drain on kitchen paper. Drain any remaining oil from the pan into a bowl.

Peel the oranges and remove the pith. Cut into segments.

Put the watercress, rocket and orange segments into a bowl along with the walnuts. Toss.

Add the balsamic vinegar to the remaining walnut oil along with the orange juice, and whisk. drizzle the dressing over the salad, toss and divide between 4 plates.
