| Recipe Ingredients |
| 50g pecan nuts, chopped; 25g sunflower seeds; 225g plain wholemeal flour; 1 tbsp baking powder; 125g soft brown sugar; 2 medium bananas; 100g butter, melted; 1 large egg; 150ml semi-skimmed milk; 100g sultanas. |
| Recipe Method |
| Line a 12-hole muffin tin with 12 paper muffin
cases. Spread the nuts and seeds on a baking sheet and bake for 7 minutes at 200c/gas 6. Leave to cool. Sift the flour and baking bowder into a bowl and stir in the sugar. In a separate bowl, mash the bananas with a fork. Beat the butter, egg and milk together then add to the flour, along with the banana, nuts, seeds and sultanas. Mix well and divide the mixture between the paper cases. Bake for 25 minutes until golden. |
