| Recipe Ingredients |
| 25g butter; 4 undyed smoked haddock fillets; 8 rashers back bacon 120ml double cream; freshly ground black pepper; snipped fresh chives, to garnish. |
| Recipe Method |
| Melt the butter in a frying pan. Cook the
haddock fillets for about 3 minutes each side. Transfer to a large
ovenproof dish and cover. Reserve the juices in the frying
pan. Grill the bacon. Reheat the frying pan and add the cream. Bring to the boil and simmer for 1 minute. Season with black pepper. Place 2 rashers of bacon over each fillet and place under a hot grill for 1 minute. Pour over the hot cream sauce and serve with the snipped chives scattered over the top. |
